2 green chilies finely chopped(use according to your preference)
¼ tsp freshly ground pepper
1 tsp soy sauce
For the Manchurian sauce
⅓ cup light soy sauce
2 tbsp sambal or any chili sauce
2 tsp tomato paste
2 tbsp crushed jaggery or brown sugar
6 cloves garlic finely chopped
handful of chopped cilantro
½ tsp freshly ground pepper
½ cup water

Instructions
For the Wrapper:
In a mixing bowl, add All purpose flour, salt, oil and water. Mix well and knead it for 5-8 minutes. It should be smooth and not to hard or soft. Cover with a kitchen towel and let it sit for 30 minutes to 1 hour.
For the stuffing:
Saute all the vegetables for a couple of minutes with ginger, green chillies in a non stick pan with a tsp of oil and the soy sauce. Add pepper in the end. You could skip the sauteeing if you like the vegetables raw and more crispier.
Keep all the ingredients ready to be rolled.
For the Manchurian Sauce:
In a sauce Pan, add all the ingredients for the sauce except the pepper and bring it to a simmer for 15-20 minutes. Adjust the spiciness and sweetness according to your preference. Add the pepper and take it off the heat and cool.
Assembly:
Divide the dough into equal portions. It will make around 24 rounds. The size of dough should a medium marble size.
Take one portion and liberally dust with flour and roll to very thin circles, about 3-4 inches in diameter. Dust well and keep everything on a sheet and cover.
When you are ready to stuff it, take a tablespoon of the stuffing and put it in the center. You can pinch and make the momos any way you wash. Make sure to seal the edges very well though. Make all the momos/dumpling, keep under a towel so that it doesn't dry out.
Boil some water in a steamer, oil well and steam the momos for 3-5 minutes. Once they are cooked, you can serve with the dipping sauce.
FOR THE MANCHURIAN:
In a flat bottomed pan, add a tbsp of vegetable oil. Arrange the momos in it. Let it brown on both side. Then toss some Manchurian sauce. Garnish with some green chilies and scallions. This is a spicy sauce, adjust the spiciness to your liking.

Notes
You can stuff momos with anything. You can add grated tofu, paneer, minced chicken. You can steam them, deep fry them and pan fry them.
