SHeet pan BEans and Salmon with peanut butter miso dressing

Ingredients
  • 3 tbsp hot water
  • 2 tbsp organic peanut powder or peanut butter, unsalted
  • 1 tbsp miso paste
  • 1 tbsp mirin
  • 2 tbsp soy sauce (I used Bragg’s liquid aminos)
  • 1 tsp ginger, grated
  • 1 garlic clove, crushed
  • ½ tsp chili flakes
  • Salmon fillets
  • Beans
  • 2 Potatoes
  • Cherry tomatoes
To serve with
  • cucumber and some basil
Instructions
  1. Heat oven to 400°F | 200°C. On a large rimmed baking sheet, toss together potatoes with the oil, ½ tablespoon of garlic, ½ teaspoon salt, and ¼ teaspoon pepper. Spread out in an even layer and roast for 15 minutes until they're just starting to soften and brown.
  2. Mix all the ingredients for the dressing.
  3. Push potatoes to one side of the sheet pan and arrange salmon down the centre. Arrange the salmon and beans.
  4. Pour the mixture over the salmon and beans. Season everything with the remaining salt and pepper. Add the tomatoes.
  5. Return to oven and continue baking until the potatoes are golden and fork-tender and the salmon is opaque throughout, (about 10 minutes). Optional: broil in the last 2 minutes for charred edges.
  6. Serve hot with some cucumber and basil.
