Ingredients
2 eggs
1 large soft ripe banana
¼ cup olive oil
¼ cup maple syrup or ½ cup sugar or dark brown sugar(works best)
½ cup whole milk or almond milk
1 cup whole wheat flour
1 tbsp baking powder
⅓ tsp salt
1 tbsp vanilla extract
½ cup chopped walnuts
½ banana sliced to garnish
chocolate chips to top - optional
Instructions
Preheat oven to 350 degrees. Spray a loaf pan with non-stick cooking spray or grease with butter and set aside.
Add the bananas to a mixing bowl and mash with a fork.
Add the vanilla extract and egg, oil , dark brown sugar,, milk to the bowl and use the same fork to mash and stir until no yellow streaks of egg remain.
In a second large bowl whisk together the flour, baking powder and salt.
Add the dry ingredients to the wet ingredients and mix together with a spatula just until combined. Dust the walnuts with some flour, mix it in the batter. REserve some for topping.
Pour the batter into prepared loaf pan,top it with walnuts, press it well and bake for 40-45 minutes until a toothpick inserted in the center of the bread comes out clean.
