This simple delicious cake bakes so beautifully, with a sauce that forms in the bottom. This maple rum apple pudding cake with banana is a quick dessert to take for potlucks and surprise guests with.
I woke up one morning last week just when the sun was peeking through. I suddenly felt the need to grab my robe, and I really craved a warm cup of coffee. Autumn. FINALLY. My bones have ached for this season. I want to believe the fallen leaves that cover our footpath now match the hues of my heart.
Every morning, I sit on the large floor by the tall windows and stare at our neighbor’s apple tree. It has thrived. I’ve seen them grow for years, from a tiny sapling to a young tree. And now they stand proudly with fruits that blush with pinkish reddish hues. Ready to be plucked. The tree very gracefully hovers over our fence calling for us to enjoy her. Wait, is it fair to pluck fruits from someone else’s tree? Not sure.
I hear a doorbell one evening, and our sweet Chinese neighbor is standing outside with a basket of apples. The apples that I saw grow and spoke to. I’m clearly excited, as I almost pull the basket from her and hug her with all my might.
I’ve lived here so long that we are all loyal friends. Hugs are more meaningful, and knocks are more welcoming. I bake this beautiful apple pudding cake and drop it off the next day. And we sat and enjoyed a slice over a cup of piping hot tea.
While I enjoy looking at fancy desserts, I prefer eating simpler no fuss ones. I do enjoy baking with apples. My apple tarts are a favorite here, and the sesame apple cake is so flavorful and addictive. A recipe of apple funnel cake from Masala and Meatballs is my absolute favorite.
Maple Rum Apple Pudding Cake with banana and pecans
If you love the ease of banana bread, you will love this pudding cake. It all gets tossed in, bakes slowly and oozes delicious sauces. Serve with ice cream and it’s probably the easiest fall quick dessert.

- 1 cup all purpose flour or ½ cup whole wheat flour+1/2 cup almond meal
- 1 tbsp baking powder
- pinch of salt
- 6 tablespoons butter(I use butter) or ⅓ cup olive oil(to make it vegan)
- 1 gala apple, grated
- 1 banana mashed
- ⅓ cup super fine white sugar
- 1 large egg( omit to make it vegan)
- 1 cup whole milk or light coconut milk(to keep it vegan)
- ⅔ cup maple syrup
- ⅓ cup packed dark brown sugar
- 2 tsp rum
- Pecans to garnish
- thinly sliced apple to garnish
- Banana to garnish
- Butter a 9 inch dish well and set aside. Preheat oven to 375 degrees. If you are using a small table top oven, bake at 350 degrees.
- In a mixing bowl, add the all purpose flour, baking powder, salt and mix it well.
- Using a microwave, In a heat safe bowl, melt butter. Add the fine white sugar, apple, banana and egg. Mix very well. Add the milk. Mix.
- Pour the dry ingredients in the butter fruit mixture and mix. This will be slightly liquidy, don't worry. Pour this in the baking dish.
- In a bowl, add the maple syrup, dark brown sugar, rum and mix.
- Slowly pour the maple syrup mixture around the batter uniformly.
- Arrange some apples, bananas and sprinkle pecans.
- Bake in a 375 degree oven for about 40 minutes. Let it rest for 10 minutes before serving it.
- Serve warm with some ice cream.
