An easy and quick summer treat that is great for entertaining or a pick me up on those warm summer afternoons. The chocolate matcha mousse is a no-bake, eggless dessert that’s creamy, fluffy and oh so good.

The windows are open, and a light breeze comes in moving around the papers left on the table. A warm heat touches the side of my elbows. Waffles finally has made his way to a corner of the garden where bougainvilleas are showering him with flowers and shade. He digs a little spot for himself and sits cozily, tucked in for the next few hours, sun bathing. I take my cold coffee outside, sit under the large red umbrella, and turn on my Etta James playlist with a book to scribble on. Gazing into nothing and closing my eyes, I’m dreaming of the next couple of months…. I can feel it slowing down, as the holidays are approaching. Ready to embrace the heat…
The first day of summer break, I planned a small picnic to toast to a beautiful summer with the boys. A simple chicken salad, peach lemonade in a bottle, a loaf of rustic sourdough, and four cups filled with the most luscious chocolate dessert packed neatly with some ice to keep it cool.
Hiking shoes on, picnic basket packed, we set out for our hike just a few minutes away from home. Waffles by our side, happily wagging and running around the dry grass, coming back to us every few seconds. We come to a bridge with a few picnic benches and settle down to have our lunch.
As usual, the boys go first to the dessert. They took their little spoons and dug into the mousse, with its layers of different textures and flavors. Their eyes widened after they took the first bite, and they began to tackle bite after bite, barely stopping for air. As they got to the bottom, they frowned as they realized how quickly they finished their dessert. And they look up to tell me me how much they loved the dessert. My younger one actually asked for it again the very next day.
This Chocolate Matcha Mousse is thick and light, airy with a touch of booze, and ever so delicious!
Chocolate Matcha Mousse
Chocolate and Matcha pair really well. They not only look absolutely gorgeous, but taste great together. Chocolate Mousse is of the easiest desserts out there, but one that makes an impression and satisfies the sweet tooth of kids and adults. Make sure to use good quality chocolate, I use Lindt or Ghirardeli semi sweet chocolate bar. You can add any flavorings you want. Rum, bourbon, mezcal all work great and in this case I used Kahlua which we love and goes perfectly well with this Chocolate Matcha Mousse.
Make sure to get good quality matcha powder. I use the Encha Matcha powder. A little goes a long way.
Make this Chocolate Matcha Mousse and top it with some chocolate wafer pearls to fancy it up.
- 2 cups heavy whipping cream, chilled
- 3 tbsp confectioners sugar
- ½ cup semi sweet chocolate bark/chips or about 4 oz
- 2 tbsp brewed coffee or 1 tbsp instant cof
- 2 tsp kahlua
- 1 tbsp matcha
- ⅓ cup white chocolate
- Freeze the bowl that you plan to whip the whipping cream in.
- Add the whipping cream in the bowl and using the whipping attachment, beat the cream. After it is lightly whipped, add the sugar and whip it to stiff peaks. Set aside until the chocolate is melted.
- Take two bowls and add semi sweet chocolate, brewed coffee and brewed coffee in one and the other bowl filled with white chocolate and matcha. Melt the semi sweet chocolate in a double boiler. You can use a microwave to melt the chocolate for 20 seconds at a time if you prefer.
- You want ¾ of the whipping cream for the semi sweet chocolate mousse and ¼ of the whipping cream for the matcha mixture.
- Add ¼ cup of whipping cream to the melted semi sweet chocolate and mix well. Once that's mixed well, add about 2 cups of whipping cream and fold well. Add the rest of the whipping cream to the match white chocolate mixture. Fold well.
- Add it to piping bags or you can spoon it in serving glasses.
- Pipe ¾ of the glass with chocolate mousse and a little of the matcha.
- Top with some chocolate wafers and serve.
