Welcome to my new space!!!
I hope all of you had a great Thanksgiving!
We did, and I am excited for my new little space here.
When the thoughts of writing snippets along with food came to mind, blogging was the way to go. Since I procrastinate so much, it helped that my then 12 yr old opened up a blogger account and jumpstarted the blog. That’s the story of how this blog was created.
I’ve been thinking of giving a slight facelift to the space for a while now. He comes to my rescue :), again. We sit, decide on the layout and he goes to work. After a few days and help from hubster, my boy redirected the blog to this one. He got his Christmas gift early, BOSE headphones!!
Please give me your feedback on this project. Any suggestion is most welcome.
Now to these baby potatoes, which were so easy and were paired so well with rotis.
This is a versatile side for rice, roti/flat bread. These potatoes need very little prep, are sweet and perfect with the skin on. Now, modesty is the key with spices over here. It can get overpowering (totally talking from experience). They are great as a salad just on its own. They are great warm or cold.
Bake at 350 degrees
Prep time-5 minutes
Cook time-30 minutes
Ingredients:
2 pounds Marble potatoes( or any kind of baby potatoes)
1 tsp fennel seeds
1/2 tsp pepper
1 tsp coriander seeds
1 tsp chili powder
1/2 tsp turmeric
1/2 tsp salt
2 tsp olive oil
1 tsp sugar
Method:
1. Wash the baby potatoes well and pat dry.
2. Dry roast fennel seeds, pepper, coriander seeds in a non stick pan on low it and grind it to a fine powder.
3. Add the spices to the potatoes along with the chili powder, turmeric, salt and oil. Toss well.
4. Bake in a single layer at 350 degrees for about 25 -30 minutes.
5. Take the pan out of the oven,immediately sprinkle with sugar and some fresh cilantro.
Alternatively:-
You could pan cook the potatoes with few tbsp of water and cover and let brown well on medium high temperature. Then reduce the flame and let cook on the inside.
