I forget how I exactly got introduced to momos or when. Â I know one thing, I love them.
I went through a stage a few years ago when I researched about various cuisines of India, few countries too and wrote about them in my note book(which I thought I’d publish one day). I was so intrigued by local food of different countries.  I tried speaking  to friends from those regions, learnt how to make some authentic food(I tried). I could have a conversation about local cuisine to people and that felt good.  Don’t know what happened to that book or that enthusiasm.  I can go on and on about the various types of dishes  I’ve learnt, but I’ll bore you’ll next time.  Today it’s about the beautiful country, Nepal where Momos are a popular delicacy.
By now we all have heard about the devastation that the country went through. Â It is very sad and breaks my heart. Â When my mom came back from her visit to Kathmandu(capital), she had one thing to say. Â The people of that country are so gentle and beautiful. Â Although, I haven’t visited Nepal(it’s in my bucket list), I’ve seen and heard very lovely things. Â Unfortunately, the earthquake has just put a lot people in deep pain. Â This post is just my way of saying, ‘I’m thinking about you’.

- 1 cup All purpose flour(makes 24 momos)
- ½ tsp salt
- 1 tbsp oil
- ½ cup water
- ½ cup flour for dusting and rolling.
- ½ cup finely chopped red cabbage
- ½ cup finely green cabbage
- ½ cup grated carrot
- 1 tsp grated ginger
- 5 stalk scallions chopped
- 2 green chilies finely chopped(use according to your preference)
- ¼ tsp freshly ground pepper
- 1 tsp soy sauce
- ⅓ cup light soy sauce
- 2 tbsp sambal or any chili sauce
- 2 tsp tomato paste
- 2 tbsp crushed jaggery or brown sugar
- 6 cloves garlic finely chopped
- handful of chopped cilantro
- ½ tsp freshly ground pepper
- ½ cup water
- Green chilly
- Scallions
- In a mixing bowl, add All purpose flour, salt, oil and water. Mix well and knead it for 5-8 minutes. It should be smooth and not to hard or soft. Cover with a kitchen towel and let it sit for 30 minutes to 1 hour.
- Saute all the vegetables for a couple of minutes with ginger, green chillies in a non stick pan with a tsp of oil and the soy sauce. Add pepper in the end. You could skip the sauteeing if you like the vegetables raw and more crispier.
- Keep all the ingredients ready to be rolled.
- In a sauce Pan, add all the ingredients for the sauce except the pepper and bring it to a simmer for 15-20 minutes. Adjust the spiciness and sweetness according to your preference. Add the pepper and take it off the heat and cool.
- Divide the dough into equal portions. It will make around 24 rounds. The size of dough should a medium marble size.
- Take one portion and liberally dust with flour and roll to very thin circles, about 3-4 inches in diameter. Dust well and keep everything on a sheet and cover.
- When you are ready to stuff it, take a tablespoon of the stuffing and put it in the center. You can pinch and make the momos any way you wash. Make sure to seal the edges very well though. Make all the momos/dumpling, keep under a towel so that it doesn't dry out.
- Boil some water in a steamer, oil well and steam the momos for 3-5 minutes. Once they are cooked, you can serve with the dipping sauce.
- FOR THE MANCHURIAN:
- In a flat bottomed pan, add a tbsp of vegetable oil. Arrange the momos in it. Let it brown on both side. Then toss some Manchurian sauce. Garnish with some green chilies and scallions. This is a spicy sauce, adjust the spiciness to your liking.
You can steam them, deep fry them and pan fry them.

Oh yum! I’m a sucker for any dumpling kind of thing and these are just gorgeous. Love the Manchurian twist on this, I love the flavours of the sauce.
I tried momos at some Tibetan restaurant, and they were ok, nothing like these!
I haven’t tried making them but you’re making it look easy!

Very sad indeed, I have been to Nepal, actually my mom’s village in very close to India-Nepal border in UP. So when we were kids, we would go there often during our summer vacations. Thoughts and prayers with everyone! Coming to the food, the momos look incredible though I have to confess I always liked the chutney that they served in India more than the momos lol..I need to make these soon, tossing them in that manchurian sauce is awesome!

I’m making these tonight! I smiled really wide when I saw your post. My father-in-law is in a nursing home nearby and one of his carers is from Kathmandu and her family has lost everything. I’m going to write about Sumi and her family but I wanted a Nepalese recipe and she gave me her mother’s recipe for Momo. Can’t wait to see if mine look as good as yours.
