Easy to make, this protein packed sandwich will be the best you’ve made. Made with roasted garlic, sun dried tomatoes and heat from jalapenos is far from dull.
Often in our culture, we don’t open the door to difficult conversations with our parents because the value of respecting our elders can be taken to mean never disagreeing with them openly. I had parents who were slighty above the average when it came to what I wore. Piercings were considered ok, even a beauty for a women. I was nonplussed. Practically every female relative I had wore a nose ring, it was considered both aesthetically pleasing and an auspicious thing to do.
But tattoos? That felt incredibly transgressive in the culture I was raised in.
Till date I am shy or chose not to tell my family or some friends about the tattoos I get. I am in my mid forty’s and if I feel that way, I wonder what this generation thinks about it. Even though women in those days got their arms tatooed, it is by no means acceptable when i was growing up and even now. Even though we got our hands intricately painted with henna for weddings and religious celebrations, tattoos of the permanent variety were forbidden. It simply wasn’t becoming for an Indian “decent” person to have tattoos. For what it’s worth
Ultimately, tattooing is an individual’s choice that should in no way affect how a person is viewed in the workplace or in public. Of course, there are the few overwhelmingly rudimentary and crude depictions, but more common is simple, reasonably sized art that holds a deeper, dearer meaning to the wearer. Tattoos are something that, to the youth of America, is normal. As the years progress the opinion of tattoos will become increasingly more positive. This shift will become a reflection of a new culture, a culture where self expression and creativity are accepted wholeheartedly.
So, what’s the big deal about tattoos? Well, it really is not too horribly controversial when compared to other topics in the news. What the topic of tattooing allows teens is the opportunity to practice self expression, whether that is through actually getting a tattoo or simply voicing an opinion. As we get older, we are going to have to learn to defend our own beliefs, and beginning with speaking up about seemingly arbitrary topics builds the sort of confidence we all are going to need as we step out into the world. Tattoos give all of us the chance to say what we think, and hopefully, if we are lucky, teach us the skills we are going to need to change the world.

Just like the simplicity of my tattoo, here’s a one of my favorite ever meals now, White Bean Avocado Sandwich. No ordinary sammy, it’s got roasted garlic, heat from the jalapenos, sundried tomatoes, OH SO GOOD. Anything tastes better stuck between two slices of bread, especially some mashed avocado.
I know that avocado sandwich is all popular, but hear me out on the joys of this white bean avocado sandwich.
Tasty, Healthy & Protein Packed
When eaten in a balanced diet, it’s great because avocados are high in monounsaturated fats (that’s the good kind), potassium, vitamin K and much else besides.
How to make an Avocado Sandwich
INGREDIENTS for White Bean Avocado Sandwich
- Avocado: Avocado makes for a perfect healthy sandwich spread. Use a ripe avocado that is easy to mash with a fork.
- White Beans – packed with protein, this buttery bean is perfect
- Lemon juice: Use fresh lemon juice rather than bottled for the best flavor. The lemon flavors add a burst of freshness and the acid cuts through the creamy avocado.
- Bread: Any type of bread works great for this vegetarian sandwich. This is perfect on rye, whole grain, 35 grain and even a sourdough.
- Jalapenos
- Roasted Garlic – roast your whole garlic wrapped in a silver foil and use it later
- sundried tomatoes – the oil it is preserved in is also so good.
Honestly, it’s not too complicated of a recipe. The only real catch is making sure you’ve chosen the right avocado.
The trick to finding the perfect avocado is the stem or the place where the stem was. If you flick the little stem out, and the skin underneath is green, your avocado is perfect.
If the skin is brown, your avocado is overripe. And if you can’t get the stem to come out easily, it’s not ripe yet.
Have all your ingredients ready and this comes together in five minutes.

- 1 can/15 oz cannelino beans
- 3 ripe avocados - 2 to mash and 1 chopped
- 1 whole roasted garlic
- 1 cup Cilantro
- 2 tbsp hot sauce ( I use sriracha and @truff)
- dash salt
- ¼ tsp pepper
- 5 jalapenos ( use accordingly)
- sundried tomatoes in oil
- 2 tsp OIl for the sundried tomatoes
- Juice of 1 large lemon
- 2 tbsp Chives, finely chopped
- Sourdough bread or whole grain bread
- In a food processor, add the avocados, white beans, roasted garlic, cilantro, hot sauce, salt, pepper, jalapenos,sundried tomatoes, oil and lemon juice. Pulse and smash it. Try to keep it slightly chunky.
- Once that is done, take it out in a bowl, add the chives, the avocado you had chopped. This will add that chunky aspect to the mix.
- Use a good quality bread, top it with a good amount of the filling. Have it as a cold sandwhich.
