Sweet Paratha. Flaky buttery paratha stuffed with nuts, spiced with cardamom and saffron is topped with sweet condensed milk. Divine and irresistible. Perfect as a sweet treat, a great snack, and offering during festivals.
WHEN I WAS GROWING UP, mom made an array of quick sweet treats for a junk loving household. Although my dad was very health conscious, sweets was his weakness. He would skip a chapathi, but eat that sweet poli, or mom’s classic gulab jamun. Sweets were not a rare appearance like many homes. Mom made her famous sweet dosa, sweet pongal, pal poli, sweet paniyaaram for breakfast, and evening snacks were the classic traditional ones. When special occasions came by, there were the pricey nuts involved and more ghee, of course.
Being a working mom, she never made us feel like she was busy, she made sure to pamper us with the most delicious food and quality family time. I didn’t have to pester her a lot, a request or an order sometimes, and anything we asked was ready in minutes. Although there were so much sweets, she’d balance it out with all the veggies she snuck in into our diets. Smart lady!
My love for sweet treats still exists and thankfully hubby and my older one are equally obsessed with anything sweet with the aroma of ghee. Not sure what gene pool my little baby bear came from, Indian desserts are not his favorite, but he can inhale cartons of cookie dough ice cream :).
This treat came about when I wanted something quick, comforting and decadent. One evening after watching a movie with the family, everyone craved something sweet, and this is what I made. It became a favorite midnight treat after that, a wickedly tasty treat. It was inhaled that night and every time after. Later, I got to know that a similar version is popular in Dharwar, Karnataka made with cashews and poppy seeds, but it’s deep fried. Interesting!
With the festivities going on full swing, this could be such a nice treat for Ganesha, or just for your family and friends. You’ll LOVE IT.
Sweet Paratha or Sweet Roti stuffed with Nuts
Stuffing
Stuffed with a mixture of nuts, cardamom, nutmeg and saffron, this sweet paratha or sweet roti is a delight. You can sweeten it with brown sugar, coconut sugar or white sugar. Try not to powder the nuts very fine or keep it too chunky.
Dough
To make the paratha, you have to make a short crust dough with oil or ghee or both. To make it a little lighter(and healthier) I add very little oil and not go full out like a real buttery dough. The process of making this paratha is very easy once you have the dough and stuffing prepared.
- 2 cup all purpose flour
- 3 tbsp warm oil
- ⅓ tsp salt
- Water to make the dough
- ⅓ coarsely crushed cashews
- 3 tbsp powdered almonds
- ⅓ cup crushed pistachios
- 2 tbsp poppy seeds, toasted
- ⅓ tsp cardamom powder
- pinch of nutmeg powder
- 3 tbsp brown sugar or jaggery or white sugar
- pinch of saffron
- Ghee to make the rotis
- condensed milk or ghee
- In a mixing bowl, add the flour, warm oil and salt. Mix it well until all the oil is soaked in by the flour. Add little water at a time to make a soft dough. The dough should be stiff, not too soft or too hard. Let it rest for an hour.
- Coarsely crush all the nuts, it shouldn't be too chunky or too pasty. Pour it in a bowl, add the cardamom powder, nutmeg, sugar, saffron and mix well.
- Take a small piece of dough, roll to about 5 inches,brush it with some ghee, add 2 tbsp of nut mixture. Fold it like you would fan or roll. Flatten it again to about 4-5 inches.
- Put it on a hot griddle, brush it with ghee and cook on both sides.
