An Indian Thanksgiving or Indian inspire meals for Thanksgiving is how I do it. Thanksgiving is my favorite celebration among the many American traditions. I find the meaning behind it intriguing, and I enjoy the holiday.
It’s about family, and being grateful and thankful for everything. And this Thanksgiving, I am more than thankful to be among my favorite people, my FAMILY. Words can’t explain how grateful and thankful I am for everything that’s happened to me. Have a great Thanksgiving!

Indian Thanksgiving Menu:
Chicken Rollatini
Recipe:
Chicken breast- 4 carefully butterflied
Spinach – 2 cups
Red Bell pepper – 2 cut lengthwise
Paneer – Grated 1 cup
Feta cheese – 1/2 cup
Sumac, tikka spices Salt, Pepper, Toasted cumin powder
Root veggies to go on the bottom of the pan
Method:
Preheat oven to 425 degrees for 1 hr.
Take a baking pan and add all the root veggies, toss with olive oil, salt and pepper.
On a clean surface, take a chicken breast that has been butterflied. Stuff with spinach, grated paneer, red bell pepper, and sprinkle with some salt, pepper and toasted cumin powder. Top it with feta cheese. Roll tightly and keep it on top of the veggies on the baking tray/ dish. Do this for all the other chicken breast.
Sprinkle the tops with some tikka spice and or sumac. Make sure not to over salt the chicken. Generously drizzle oil and bake at 425 for 30 minutes.
