Say hello to your new favorite one pot meal, Coconut Milk Shrimp Pasta.s This seriously blew away our taste buds and became an instant favorite with the first bite.
Rewind to the time I despised shrimp and then loved it. Growing up I hated shrimp, then there was a stage I loved how my grandma made it and would eat it only that way. Now I’m plain allergic to seafood, sad, But I still cook it all the time with loads of love for my family.
Especially because my hubby loves shrimp! So I try to cook a meal with shrimp for him a every week. This dish I make for my friends and they enjoy it. It’s a crowd pleaser. A shrimp hater would love it too.
The awesome thing about this meal is that it is cooked in just one pot. Only having to dirty one pot and deliver an amazing meal for the family.
The shrimp is cooked in a blend of spices, simple and quite delicious. I love shrimp because it cooks so incredibly fast. It gets tossed in the creamy coconut milk past and the combo is DIVINE.
So basically all of our favorite things in one. Spices, coconut milk, shrimp and veggies…. are you getting hungry? 🙂

- 4 oz Pasta of your choice
- Zucchini - 1 sliced
- Squash - 1 sliced
- 2 tbsp + 1 tsp olive oil
- 5 garlic, chopped
- 1 tsp chili flakes
- ½ tsp dried oregano
- 1 can or 13 oz full fat coconut milk
- 1 tsp salt
- ½ tsp Pepper
- Shrimp - ½ pound, cleaned and deviened
- ½ tsp garlic powder
- 1 tsp cayenne pepper
- salt to taste
- ⅓ tsp oregano
- ½ tsp onion powder
- Cook the pasta of your choice and set aside.
- Wash and pat dry the shrimp. Mix the garlic powder, cayenne pepper, salt, oregano, onion powder. Toss it with the garlic and let it marinate for 15 minutes.
- In a pan add oil, add 1 tsp olive oil and pan fry the shrimp for 2-4 minutes until it is fully cooked depending on the size of your shrimp. Cook and set aside.
- Clean the same pan and add 2 tbsp oil, add garlic and zucchini and squash with ½ tsp of salt. Brown it and cook for 2-3 minutes. Add the red chili flakes and oregano and cook for another 2 minutes. Pour in the coconut milk, salt and pepper. Simmer it for 4 minutes, add the pasta and mix fully. Turn off the heat and serve with shrimp.
