Life has revolved around marriage, kids, and home. Being occupied with taking care of everyone’s needs, the home, groceries, laundry, homework, and food :I’ve often forgotten about myself or failed to prioritize my own needs. Sure, I’ve worked out, taken vitamins whenever I remembered, and dressed up, but have I truly considered my own desires and pursued my dreams? Most mothers can’t, and even though I tried, I felt like I couldn’t or simply didn’t want to.
Many days, I would feel unsettled and question my parenting skills. Am I a good mother? Am I doing the right thing? Do my boys love me? These are the questions we moms ask ourselves. Why did I often feel on the verge of Mommy Tantrums?
As moms, we try to suppress our feelings in front of our kids, but mentally, it takes a toll.
I used to wonder why. Here’s the reason: raising kids is a Mammoth of a task. Not only is it a huge undertaking, but it’s also a challenging one. We experiment and hope that we’re doing something right. So, please give yourself a pat on the back and remember that no one can do what moms can. You’re doing the best you can, and you should never doubt yourself.
As I write this post today, I fondly think back to the past with my little boys. I now have more time on my hands and less stress from picking up kids and tending to their every need. And I have the opportunity/time to ask myself, ‘Where do I see myself in 10 years?’ What do I want to do?
I’d love to follow in the footsteps of Elizabeth Gilbert’s ‘Eat Pray Love’ and make it my own.
I want to live life, love life, give back, and still be there for my boys when they need me. Do what makes YOU happy. I made myself a tiramisu, shot it and ate a few slices watching Cleopatra on Netflix. And that my friends, is also considered a form of self love.
Here’s a toast, a TIRAMISU toast, to celebrate myself and all moms. Let’s celebrate ourselves because we are nothing short of superheroes.

Eggless Tiramisu
You can never go wrong with this dessert and give me a TIRAMISU, I’ll love you forever. Whenever I share eggless recipes, they seem to be a favorite and this chocolate tiramisu tops it all. Ever. I must say though, this eggless tiramisu is my new favorite!
There is nothing more delicious than a creamy and boozy tiramisu, especially with a little bit of chocolate. This is my number one dessert when I need something sweet or need something with chocolate and coffee…or both.
Now, traditional tiramisu tend to use eggs and has couple of steps, but not this one! This eggless tiramisu recipe is a little bit different. It needs just a handful of ingredients and has no eggs in them.
I’m always on dessert duty and this one always wins with my friends. They love that it’s eggless.
What makes my recipe different:
My tiramisu does not use eggs. It’s the easiest tiramisu recipe to make, and there’s no sacrifice in flavor.
Traditional tiramisu uses raw egg yolks and sugar beaten and then combined with raw whipped egg whites and mascarpone. I’ve tried that method, but thought people would most likely be turned off by the raw eggs.
I’ve made many recipes before, some take time, some have that egg smell and this is what I’ve finally come to love and everyone enjoys it a lot.
So, I ultimately decided to swap out the egg whites in favor of fresh whipped cream, because I like the flavor and texture more. The result is delicious and EASY! You’re going to love it!
How do you make eggless tiramisu?
The Ingredients – since it has very few, use the best quality.
- Whipping cream– Use the one with more fat in it and chill well to whip later well.
- Cocoa powder– Dutch processed or 100% unsweetened cocoa powder. I prefer using Hershey’s Cocoa Powder as it’s not bitter.
- Powdered sugar– Powdered sugar is also known as icing sugar or confectioner’s sugar. It is much more finely ground than caster sugar – to the point that it is quite literally ‘powdered sugar’ The finer sugar consistency will guarantee a smoother batter which in turn yields even more gooey brownies.
- Chocolate– Use your favorite kind, we need very little.
- Mascarpone – get the best kind
- Ladyfinger cookies; These are crispy italian biscuits that soften real fast in any liquid. About 24 ladyfingers (from one 7-ounce/200-gram package). You can substitute this with cake that’s less sweet, cookies that are not overly sugary.
What kind of alcohol is used in tiramisu?
Tiramisu can be made with or without alcohol. This recipe uses rum and coffee flavored liqueur because I like that it enhances the coffee flavor.
Alcohol free: Leave it out completely.
Alcohol variations: use dark rum, brandy, marsala wine.
Espresso substitutions: coffee, decaf
How to make ahead and freeze?
Tiramisu is even better when made in advance, allowing the flavors to blend! It will keep in the refrigerator for 2 to 3 days.
To freeze, make completely, but don’t dust with cocoa powder. Cover tightly with plastic wrap and then tinfoil and freeze for up to 3 months. Thaw in the refrigerator overnight and dust with cocoa powder a few hours before serving.
- 1 pint whipping cream
- 1 cup (250g) mascarpone, softened
- ¼ cup (50g)powdered/ granulated sugar
- 1 tsp (5ml) vanilla extract
- 2 tsp instant coffee powder
- 2 tbsp dark rum or marsala
- 1&1/2 cups espresso or very strong coffee, cooled
- 2 tbsp coffee liquor (I used Kahlua)
- 24–28 ladyfingers (Savoiardi/Boudoir) the number of cookies will depend on whether you are using an 8×8″ or 9×13' pan. (all of this measurement is for 9x13 inch pan)
- 2 tbsps finely chopped chocolate(optional)
- 2 tbsp unsweetened cocoa powder
- In the medium bowl, whip cream, after it is slightly stiff, add sugar until it creates soft-medium peaks. Add the vanilla extract, 2 tbsp rum and 2 tsp coffee powder. Add mascarpone and continue to whip until it creates a soft, spreadable mixture with medium peaks. Place in refrigerator until ready to assemble.
- Combine espresso and coffee liquor in a shallow bowl and set aside.
- with 1 tablespoon cocoa powder.
- Working one at a time, quickly dip each ladyfinger into the espresso mixture -- they are quite porous and will fall apart if left in the liquid too long -- and place them rounded side up at the bottom of the baking dish. Repeat, using half the ladyfingers, until you’ve got an even layer, breaking the ladyfingers in half as needed to fill in any obvious gaps (a little space in between is O.K.). Spread half the mascarpone mixture onto the ladyfingers in one even layer. Repeat with remaining espresso-dipped ladyfingers and mascarpone mixture.
- Dust top layer with remaining tablespoon of cocoa powder. Top with shaved or finely grated chocolate, if desired.
- Cover with plastic wrap and let chill in the refrigerator for at least 4 hours (if you can wait 24 hours, all the better) before slicing or scooping to serve.

You dear I know are a mom whom I am so proud of. … I don’t know of any other newlywed, so painfully shy, entering the US and later having children, who you have brought up so well and cultured. I am amazed! I truly am. This is such a clean write up that just I know it all in its honesty. Did you come a full circle? Well yes you have indeed!!! Yet deep down as a mom, we are always apprehensive about what’s round the corner. Dear, please just run into the farms and valleys and enjoy your life just enjoying a pleasures of not having to be a mom of toddlers or teens.
