And it is this thought that allows a daydream to seep in.
You start thinking of all the other places you could be in this world.
Or more accurately, all the places you’d rather be in.
Somewhere more exciting. Somewhere new. Somewhere that can provide experiences that are foreign to you.
Travel to everyone is different, yet same. Travel is the answer much of us look to when we feel the automation of life. The routine of waking up, getting ready, going to work, eating the same lunch, sitting in meetings, getting off work, going home, eating dinner, relaxing, going to sleep, and then doing it all over again can feel like a never-ending road that is housed within the confines of a mundane box.
I travel for food, I travel to get away from the mundane and to have that quality time with family. I love talking to people in different parts of the world. I love a sneak peak into their kitchen. I love to learn about food.
On one of our trips to the Caribbean, I tried it for the first time and learnt this and have made it quite a lot. The one I saw them make were much crispier, smaller. Since I am gluten free, I enjoy having these as tortillas. They are perfect as tostadas. Do try it out!!

Whether you need a new dinner idea, a fun appetizer for a crowd, or a simple side dish for yourself , this tostada recipe is so versatile and delicious! It’s gluten free, vegan and healthy. It’s a fun recipe to customize and let everyone layer theirs with their favorite toppings.
The word “Tostada” is Spanish for “toasted” and is the name of a Mexican dish that is served on a toasted or deep fried corn tortilla. The actual tostada (the toasted corn tortilla) is the base of the recipe and is topped with refried beans, cheese, meat, lettuce, and other toppings. Here I’ve created my own by using plantain tostada, topped it with apple chutney and queso fresco.
How to make the Plantain Tostada
Making the tostadas is really not too complicated as they only require three ingredients – plantains, plus salt. You just mix the ingredients in your food processor until the texture starts to get doughy.
- Cook the plantains
- Peel and cool them completely
- Use a food processor to grind it to the texture you prefer with salt. For tostadas I keep it chunky, for tortilla shells, I like to cook the plantains more and the dough is smoother.
- The dough is sticky, so use oil to roll it out. Use a tortilla press or two plates and parchment.
- Cook on a griddle. Get it crispier for the tostadas and softer if you want to use it as a taco.
Serve with a sweet and spicy salsa/chutney, avocado and cheese.

- 2 plantains
- ½ tsp salt
- 2 tbsp avocado oil
- 2 apples
- 3 tomatoes
- 1 onion, chopped
- 3 jalapenos, chopped
- 2 tbsp brown sugar
- 2 tsp aple cider vinegar
- ½ tsp salt
- queso fresco
- avocado
- cilantro
- Beans
- Cut the plantains, boil it in water, salt for 10 minutes or until the knife goes through the plantains easily. Take it out, cool completely.
- Peel and put it in a food processor and pulse/run the machine until the plantains grind and form a dough ball. The dough will be sticky.
- Take it out on a surface. Use little oil and form balls. Use a tortilla press or a plate to flatten. Just make sure to use parchment or wax paper with little oil smeared to flatten it. Flatten all the dough out.
- Put it on a griddle and cook. Cook it on medium to low heat and cook. Take it out and serve.
- In a sauce pan, add a tbsp of oil. Fry the onions. Once it is slightly brown, add the tomatoes and apple, jalapenos, brown sugar, vinegar and salt. Cook it on medium till everything is cooked. Try not to cook the apples down fully.
- Top the tostada with chutney, queso fresco.
