Of all the conventional cooking methods, steaming is one of the most natural and healthful ways to cook the food you eat; it’s a simple technique that allows you to experience the unique flavors of the food itself. Let’s explore why this timeless moist-heat cooking method is worth using in today’s modern diet.
Steaming leaves the food with bright flavors and textures of the food intact. Unlike boiling and simmering, steaming doesn’t agitate food, so it’s a perfectly gentle way to cook delicate items like meats, seafood and shellfish. And perhaps best of all, steaming keeps all those valuable nutrients inside the food, instead of in the cooking liquid.
Steaming is a relatively quick way to cook food, so stay close. Your food is likely done cooking when it’s tender, pierced easily with the tip of a sharp knife, or in the case of vegetables, brightly colored and just barely soft. Be careful not to overcook vegetables, or your food can get mushy and taste sub-par.

How to Choose Which Artichokes to Buy
Here are a few guidelines for what to look for when shopping for artichokes:
- Choose artichokes that feel heavy when you pick them up. If they feel light, they’re probably a bit dried out and not as meaty as they should be.
- If you squeeze the artichoke, the leaves should “squeak”. This is another way you can tell the artichoke is fresh.
- The leaves should be closed with just a little separation, not flayed wide open. Remember an artichoke is a flower bud, as it ages, the leaves open up. So an artichoke with wide open leaves may be on the old side.
- “Frost kissed” is a-okay. If an artichoke looks like it has been burned by frost, no worries. In fact, these less-than-beautiful artichokes can taste even better than those not touched by frost and often command a premium price because of it.
- Make sure to remove the top woody leaves, and trip the tops
My mince buns recipe has become a frequent add on to our table while entertaining through the year. They’re quick, grab-and-go, appetizer bites while waiting for the BBQ goods to get to the table.
And for the kids, the buns become a decent sized stomach filler while waiting (or even a great add-on to the lunch box when school rolls back in.) You can make them with pork too.

- 2 artichoke
- 1 lemon
- 4 large garlic cloves
- 1 teaspoon olive oil
- 3 ⁄4 cup Greek yogurt, plain
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- little lemon zest
- salt and pepper
- FOR THE BUNS: You can used pizza dough too.
- 2½ cups plain flour
- 1 cup milk warm
- 2 tsp dry active yeast
- ½ tsp salt
- ½ tsp baking powder
- 1 tsp sugar
- 2 tbsp oil
- extra oil for greasing
- extra flour for dusting
- 250g Free Range Chicken Mince
- 6 garlic clove, crushed
- 1 cup chestnuts, finely chopped
- 6 stalks scallions, sliced
- 1 tbsp brown sugar
- 2 tbps crispy chili oil
- 1 tsp Chinese five spice
- 2 tbsp oyster sauce
- 1 tbsp soy sauce
- 2 tsp sesame oil
- ½ tsp white pepper, optional
- remove the top 2 layers of the leaf. trim the sharp edges. Squeeze lemon juice liberally. Steam for 30 minutes.
- While that is steaming, mix everything for the dip and serve with the artichoke.
- *Buns:
- Sift flour, salt, and baking powder into a big bowl.
- Add instant dry active yeast and sugar. Mix well.
- Mix oil and warm milk.
- Using the oil milk mixture, make a dough which is not too hard or too soft.
- Dust the worktop with a bit of flour. Knead the dough for 5-7 minutes till it becomes smooth.
- Shape the dough into a ball. Rub some oil over it.
- Grease the bowl with some oil.
- Put the dough in the bowl. Cover the bowl with a damp cloth or a lid.
- Place the bowl in a warm place. Allow the dough to ferment for 1½ hours or till double in size.
- *Meanwhile, add the chicken mince in a large mixing bowl, add all the ingredients and mix well, but gently. Set aside to soak in the flavors.
- Punch down the center of the dough with your fist. Turn onto a lightly floured surface and knead for 5 minutes or until dough is smooth. Divide the dough into 8 equal portions.
- Use a rolling pin to roll out 1 dough portion into an 8cm-diameter disc, about 1cm-thick. Place 1 large tablespoonful of the chicken mixture in the centre of the disc. Bring the dough together to enclose the filling, pinching the edges together to seal and form a bun. Place the bun, sealed side down, on a 6cm-square piece of non-stick baking paper. Cover the bun with a tea towel (this will prevent it drying out). Repeat with the remaining dough and chicken mixture.
- Place half the buns in a large steamer or a bamboo steamer over a wok of simmering water. Steam, covered, for 20 minutes. Transfer to a serving platter and cover with plastic wrap. Repeat with the remaining buns. Serve warm with soy or chilli sauce .
