A meal in one, Jumbo Chicken Meatballs! This recipe everything but the kitchen sink. Wild rice, veggies, spices, all comes together to make a juicy delicious meatball. Serve it with a green chutney or marinara, it’s a meal in one.
Why I love to make jumbo meatballs? It makes for a great balanced meal. Satisfies kids and adults. We love our food spicy and this has the heat and perfect Spicy Meatballs.
My Jumbo Meatballs is a very easy recipe. These Chicken Meatballs are deliciously flavored with garlic and herbs! They have a juicy texture with a rich, hearty and garlicky flavor and no bread! It’s a perfect easy family dinner that everyone will love! You pretty much dump everything in a bowl and mix it together. Takes very little time to do and the meatballs themselves….delicious!
Make a double batch of these Spicy Meatballs, they freeze really well. Needless to say, the boy can eat meatballs for days.
Ingredients for the Jumbo Chicken Meatballs
Mushrooms
Bell peppers
Spices
Cilantro
potato
Cheese that you like, I prefer Manchego or Fontina
Chicken mince
How to make the Perfect Spicy Jumbo Meatballs
Saute the veggies, garlic and fennel seeds and add it to a bowl. Add more spice and heat for spicy meatballs. Let it cool completely before you add other ingredients.
Add all the ingredients for the spicy meatballs. Mix gently until combined.
I use my hands for this.
Make 8 equal pieces. Shape each piece into a jumbo meatball. They’ll be about the size of a baseball! At this point place the jumbo chicken meatballs on a baking tray with wax paper and wrap it well and freeze. Once frozen, you can keep it in a tight lidded box or ziploc it.
Bake at 400 degrees for 15-20 minutes. Or air fry it at 360 for 20 minutes. Serve with green chutney, marinara or a chili garlic chutney.
- 1 tbsp olive oil
- ½ tsp fennel seeds
- ½ red onion
- 10 white mushrooms
- 1 red bell pepper
- 10 cloves garlic, finely diced
- 1 medium sized cooked russet potato
- ½ cup aged manchego cheese, grated
- ½ cup wild rice or any rice of your choice, cooked
- 1 bunch cilantro, leaves, finely chopped
- 16 oz ground Chicken mince
- 1 egg
- 1 tsp red pepper flakes
- ½ - 1 tsp freshly ground pepper
- ½ tsp salt
- In a electric food processor or hand processor finely chop the onion, mushrooms, red bell pepper finely. Except for the onions, Add mushrooms and red bell pepperit to a large mixing bowl.
- Take a medium sized saute pan, add olive oil and fennel seeds. Once the seeds splutter a bit, add the garlic, fry it for about a minute before adding the onion. Brown the onion for couple minutes, and add all the mushrooms and bell pepper. Cook it slightly for about a 2 minutes. Add it to a mixing bow. Let cool completely.
- Mash the potato and add it to the mixture as well. To it, add egg, manchego cheese, rice, pepper flakes, pepper, salt. Use clean hand and mix it really well.
- Add the chicken mince, be gentle to incorporate everything. Mix well. Let it sit and solidify before making the balls.
- Make the balls out of the mixture and lay it on a baking tray lined with parchment paper. You will get about 8 jumbo balls or 12 medium sized balls. Put it in the freezer for about an hour before you Air Fry them, Bake them or Pan fry them.
- Air Fry it at 360 for about 16-18 minutes or Bake them at 350 degrees for 30 minutes. You can pan fry them as well, but the shape will alter a bit.
