I think of happiness as being something that we’re always chasing — the right person, the right job — external things. To me, joy is quieter, more internal, and we often find it in simple moments along the way. Like i read somewhere: the author writes about her mother, who experienced so much disappointment and loneliness in her life, yet finds solace in the little things.
I think this is part of why cooking and eating can trigger joy. Food pulls us into the moment, and reminds us of our senses and all that we have to be grateful for. Even in — or maybe especially in — dark times.
And that feeling of gratitude for the little pleasures is in itself healing. Sometimes I think you have to experience the dark times in order to really see clearly, and experience joy.
Here’s a simple recipe that’s joyful to eat, Greek style Gigantes.
Marinated Gigantes/Greek Gigantes/Greek style Gigantes
Greek food is famous for it’s bold flavors and known to be one of the healthiest. The use of good fats, fresh herbs make this cuisine so delicious.
This marinated gigantes recipe is bold, topped on toasted sourdough, makes for a meal-in-one. The beans stay good in the refrigerator for a few days. I was inspired by Bonappetite for this recipe. While their version of marinated beans is simple with few ingredients, mine is on steroids:). With the best olive oil, herbs, addition of olives and garlic, this Greek Gigantes recipe will WOW you.
How to make Marinated Gigantes/Greek style Gigantes
To make this style of marinated beans, you need good quality oil and any beans of your choice. I happen to prefer the butter beans or gigantes that’s quite traditional to greek food. Soak and cook the beans until it’s done and not too mushy. Toss in the herbs, cherry tomatoes, lots of finely chopped calamata olives, garlic, feta and oil. This marinated gigantes tastes best once it sits and all the flavors marry each other for at least 24 hrs. It’s so flavorful on top of bread that’s slightly toasted.
How to serve these Marinated Beans
These marinated beans or greek gigantes is best on a toasted crusty sourdough bread. The oil soaks in and makes it so delicious.

- 1 cup or 8 oz dried gigantes, soaked overnight and cooked or mixed beans( or 2 cans cooked beans,15 oz)
- ⅓ cup good quality extra virgin olive oil
- ⅓ cup calamata olives, very finely diced or processed
- 4 garlic, very finely chopped
- 1 shallot, finely diced
- 3 tbsp chives
- 2 tbsp minced mint,
- 3 tbsp minced cilantro or parsley
- 10 grape tomatoes, halved
- 1 tsp hot pepper flakes
- 1 tbsp chili oil
- 1 tsp lemon juice
- 2 tsp white wine vinegar
- ⅓ tsp salt or as required
- ½ cup feta chunks or crumbles
- Take a large bowl that has a tight lid, add the beans, olive oil, olives, garlic, shallots, chives, mint,cilantro, pepper flakes, chili oil, vinegar and salt. Mix it well but gently. Stir in the feta cheese, tomatoes and pepper. Cover the bowl and let it marinate for a minimum of 3 hours of overnight. It will have the most flavor that way.
- Drizzle your favorite bread with olive oil – liberally! Heat a skillet over medium heat and add the bread to the skillet once hot. Toast until each side is golden brown and crunchy. Serve the beans on top of the toasts!
