EASY MUTTON CURRY
Mutton is a meat that needs to be cooked perfectly, and can take tang and a slight sweetness very well. In fact, I will go to the extent of saying, that little bit of jaggery goes a long way in cutting down the gamey-ness of the meat. This method of the curry requires two steps, one: to marinate and two: the cooking. Marination is very important. This is not a slow cooked curry, since it is an quick mutton curry, marinating the meat is key.
Marinating the Mutton
Mutton is a rich, slightly gamey cut with bold flavors which mellow and deepen when slow cooked. meat works best for this curry. Good meat comes from the back of the animal that is from the loin, rib and rump. This part is usually is a lot more tender. A tenderizer is very important when cooking Mutton Curry or Goat Curry. You can use a store bought tenderizer, papaya paste, pineapple along with yogurt, yogurt and lemon. Marinate the meat in spices, yogurt and lemon juice anywhere from two hours to overnight. Overnight definitely works best to get the most flavorful Goat Curry.
Cooking the MUTTON CURRY OR Goat CURRY
The preferred method of cooking this goat curry is in a pressure cooker. If you don’t have one, you can use a slow cooker, an instant pot will work too. Cooking the marinated meat in a pressure cooker ensures a tender fall of the bone Goat Curry.

Here are some easy Mutton and Chicken Curries:
- Mutton or goat meat with bones - 1 pound or 500 grams
- 1tbsp red chili powder or more (I usually use 2 tbsp, but that's because we love spicy)
- ⅓ tsp turmeric
- 1 tsp garam masala
- 2 tsp finely chopped garlic
- ⅓ cup full fat yogurt
- Juice of ½ lemon
- Salt
- 4-5 tbsp oil
- whole spices - star anise, cinammon, cardamom
- Cumin seeds - 1tsp
- ½ onion finely chopped
- 3 green chillies
- 2 tomatoes
- 1 tbsp thick tamarind pulp
- one inch jaggery or 1 tbsp brown sugar
- 2-3 tbsp thick coconut milk
- In a large mixing bowl, add the mutton. Sprinkle in the red chili powder, turmeric, garam masala, garlic, yogurt, lemon and salt. Mix it really well. Cover and marinate it for an hour. Overnight if you have the time, but not necessary.
- In a pressure cooker, add oil liberally. Once the oil is hot, add the whole spices, and toss int he onion and green chillies. Saute this for about two minutes or the raw smell of the onions goes away. Add the marinated mutton and saute it well for about three minutes. Add the tomatoes, tamarind pulp, jaggery and 1 cup of water. Mix it well and let it come to a boil. Check for salt. Add salt if needed.
- Put on the lid and pressure cook this for about 7-8 sounds. Once it's done, turn off the heat and let it sit until all the pressure is subsided. Open it carefully, away from the face and let it simmer. Add the coocout milk. Let it simmer for around 10 minutes. Check for the consistency, if you want it more liquidy, add more water, if you want it little bit dryer, bring it to a boil.
- Add some cilantro and serve with chapathis, dosa or rice.
