Masala Egg Bhurji/ Spiced Eggs is a perfect celebration dish for the non-meat eaters. Works for a special-occasion breakfast loaded with sweet peppers, goes great with rotis or on toast. YUM!
Anda Bhurji or Scrambled Eggs is probably one of the most made food in every household. This Anda Bhurji is nothing short of amazing, it’s a special dish that can be served on occasions or for your Sunday brunch.
This recipe sprung to life one fine, August afternoon as I was strolling around the kitchen getting ready for lunch. Got the chicken out and exactly knew what I was making for my little boy. But, lunch for my pescatarian hubby had me scratching my head. I’ll come to that later, I thought. First let me marinate the chicken. While mixing the yogurt, like a circuit breaker blew up, I had an idea….boom!!
Half the marinade went into the chicken and half for later. Cut the bell peppers, some for the chicken and I’d use rest for my surprise recipe. Felt like the universe wanted me to make this dish: coincidentally, I had got farm fresh eggs the previous day, and my hubby happens to loves eggs. I was excited for the new recipe. Now, fingers crossed, and hoping it works.
After the laboriousness of the bhuna chicken, the next recipe was what I was excited about. It should be decidedly easier breezier, lest you start to think I am some sort of kitchen masochist. And there it was the easiest, fanciest,tasty Masala Anda Bhurji.
What separates this Masala Egg Bhurji from any other is a variation on composition: I”ve used yogurt and cooked it down to concentrate the flavors, the sweet bell peppers stand out in this dish. I knew then, it’s going to be a happy repeater.
If you’re the sort who likes things spicy, even very first thing in the morning, then this masala egg bhurji/spicy scrambled eggs recipe is for you. Depending on just how hot you want your eggs, you can choose to omit the green chilies, or cut down the chili powder.
Feel free to use it in: sandwiches, toasts, puffpastry, whatever you can think of, but, best with rotis. Voila!!!! You’ll never go back to your normal egg bhurji.
How to Make Masala Egg Bhurji/Indian Style Egg Scramble
This Spicy Anda bhurji or Masala Egg Scramble is simple, elevated with flavors from the yogurt mix and peppers. Use good fresh yogurt, not too sour.
Bell peppers are essential for this scrambled eggs dish.They add sweetness and color.
Use good quality eggs and scramble it very well. You will not find chunks of eggs, it’s soft but well cooked.
- ⅓ cup of yogurt
- 1 tsp spicy chili powder
- ½ tsp coriander powder
- 1 tsp kashmiri powder(for the smokiness and color)
- ⅓ tsp turmeric powder
- 1 tbsp ketchup (hot and sweet from maggi works great)
- 1 tsp ginger garlic paste
- ½ tsp pepper
- 1 teaspoon salt
- 2 tbsp oil
- 1 teaspoon cumin seeds
- 1 small onion, finely chopped or ½ large onion
- 2 green chilies or 1 jalapeno
- 1 red and yellow bell pepper, sliced( you can use green pepper if you can't find colored peppers)
- 1 tsp garam masala
- 6 large eggs
- ⅓ salt
- Garnish with chopped cilantro
- In a bowl, add the yogurt, red chili powder, coriander powder, kashmiri chili powder, turmeric powder, ketchup, ginger and garlic paste, pepper and salt. Mix and set aside.
- Take a large flat bottomed pan. Add the cumin seeds, let it brown. Add the onion and jalapeno or green chilies. Saute well for about two minutes or until the onions get soft. Then add the yogurt mix. Saute this mix very very well on low to medium heat. This will take about 5-7 minutes. You will see the oil oozing out of the paste. When that happens, add the bell peppers, saute for a minute. Cover and let it cook on medium heat for about 2 minutes. Check after two minutes, add ⅓ cup of water, cover and again cook for about 3-5 minutes or until the peppers get soft. Add garam masala.
- Push the peppers mixture to one side. Pour in the eggs, sprinkle some salt, mix and scramble well. Keep scrambling until all the eggs are cooked. Cook it as much as you like it. Mix the peppers to the eggs and mix well.
- Garnish with cilantro.
