If you are like me and looking for quick and easy weeknight dinners, and I mean, who isn’t? Stir fry dinners are the way to go. You get your protein, your veggies, your everrrything in one skillet and less than 2o minutes later, the family is at the table eating a healthy dinner.
I am a huge fan of one skillet dinners and make them at least a few times each week.
And this Asian jalapeno chicken isn’t even breaded nor fried, so this is really more of a “skinny” dish, all smothered in a simple sauce, a sauce that you’ll clearly want to pour or dip in many things.
When ready to serve, you can throw this on a bed of brown rice, noodles or even quinoa, and you can also add in more veggies to your liking. It’s adaptable and just so stinking easy!
Asian Jalapeno Chicken and Beans
This chicken stir fry is about as easy as it gets. It starts with some thinly sliced chicken breast, although chicken thighs also work well. In this dish, I like to start with the beans first so it cooks first and then I add the chicken. It’s these layers that give so much depth to this easy recipe. And then it’s time for the sauce…
I feel like the sauce can be often overlooked when making stir fry. It’s really what gives the dish so much flavor and pulls the entire meal together. The sauce I used for this stir fry is what makes it the best chicken stir fry recipe.
Liquid Aminos or Soy Sauce
Mirin
Rice Wine Vinegar
Sesame Oil
Each ingredient plays a crucial role in the stir fry sauce so you really don’t want to leave anything out.
The fresh veggies and simple, delicious sauce are what really sets this stir fry apart from others. While it can be tempting to just use a bag of frozen stir fry mix, if you can, fresh is best. You can use broccoli and bell peppers in this Asian stir fry too.
- For the dressing:
- 2 tbsp liquid aminos or soy sauce
- 2 tbsp rice wine vinegar
- 2 tsp mirin or you could use 1 tsp honey
- 1 tbsp toasted sesame oil
- Mix and set aside
- 1 tbsp vegetable oil
- 5 cloves garlic, thinly sliced
- 2 jalapenos, thinly sliced
- 1 cup beans, cut to 2 inch pieces
- 2 chicken breasts, sliced in angles thinly
- Sesame seeds

- Mix all the ingredients for the sauce. Set aside.
- In a wok or a non stick flat bottomed pan, add the oil. Once the oil is hot, add the garlic and saute for 30 seconds stirring. Toss in the jalapenos, saute for 30 seconds.
- Add the beans and cook for about 3 minutes stirring occasionally, the beans should be cooked only fifty percent.
- Then add the chicken and let it cook on all the sides which will take about 3-4 minutes. Toss in the cornstarch and mix. Pour the mixed sauce and simmer and cook for a minute. Add the sesame seeds.
- Serve hot.
