Friends, you have been very, very good to me. For the past few years, you’ve been stopping by to see me on a regular basis, cooked from the blog and you’ve said some pretty nice things about the contents of my kitchen and my dinner plate.
I can hardly believe it’s the end of December. It’s the time of year we begin planning and looking back on this year, large and small achievements. We start planning our small gatherings. Before we know it, we’ll be gathering in our circles, engaging in every kind of conversation under the sun. We’ll awkwardly small talk with co-worker’s families. We’ll ring in the new year with joyful anticipation.
It’s easy to get busy with all the excitement and planning of this season.
There are parties to throw, menus to plan, tables to decorate, gifts to buy and cards to send. It’s the most wonderful time of the year, and yet somehow, it can easily rush by without much thought or intention going into the experiences we’re creating.
We’re running from one thing to the next, checking all the to-dos off our lists.
The photo shoot is Pinterest-worthy. The cards are stunning, and ordered right on time. But no matter how beautifully the table is designed, no matter how delicious the food, or perfectly packaged the gifts, in the end, it’s only the experience that will be remembered. It’s the experience that connects our hearts and minds.
It’s the experience we will either dread, or treasure, for years to come.
So take a pause this weekend to put a little extra thought to the experiences and memories you want to create. What’s most important about the experiences you want to remember? What can you do today to begin to foster those in your planning?

SPANAKOPITA OR LEEKS AND SPINACH PHYLLO TRIANGLES
This is inspired by the famous spanakopita that I love. Here, I’ve baked the spanakopita or Leeks and Spinach Phyllo Triangles is without cheese, kept the sauce on the side. I have friends who don’t prefer cheese or are lactose intolerant and this way, they can all enjoy this. I’ve added leeks and spinach in the wrap and kept the sauce separate. The cheesy, salty, tanginess combined as a dip is fresh and so delicious! The spinach packs a healthy punch because it is iron-rich!
Like other good things, Spanakopita take time and effort, but they look more complicated to make than they are. I’ve taken all the guesswork out so you can fold ’em, bake ’em, and eat ’em ASAP. Once you’re ready to go, it’s as easy as 1-2-3 sheets of phyllo dough stacked up, each brushed with butter. Cut the stack into thirds and drop a dollop of filling.
Next, fold your phyllo in to tiny flags around the filling. Although phyllo is brittle, the stack of 3 sheets makes it easier to fold without things falling apart.
Once they’re folded, place them on a the baking sheet and brush with more butter.
Bake until hot and bubbly, then let stand a few minutes before devouring in earnest.
You can make Spanakopita up to two months in advance. Freeze them in a single layer on baking sheets, then transfer to an air-tight container and keep the layers separated by parchment paper. Bake them straight from the freezer, adding an additional 5-10 minutes to the baking time.
This wrap is super easy to whip together on a weekday morning. You can also make a bunch of these on the weekend and then wrap them and freeze them! Take it out, bake them and enjoy!
- 1 tbsp olive oil
- Leeks - 1 stalk(sliced in the middle and thinly sliced, washed and drained)
- Spinach or Spring mix - 2 large cups packed(chopped)
- nutmeg
- Salt and pepper
- Yogurt
- 2 tbsp full fat yogurt
- ⅓ cup feta cheese
- 2 garlic
- 1 tbsp finely chopped mint
- 2 tsp lemon juice
- pepper
- Phyllo dough
- Preheat oven to 350 degrees F (175 degrees C).
- Heat the olive oil in a large saucepan over medium heat.
- Slowly cook the leeks and stir until softened.
- Mix in spinach or spring mix.
- Cook approximately 10 minutes, or until most of the moisture has been absorbed.
- Remove from heat.
- Lay phyllo dough flat and brush with butter.
- Place a small amount of spinach mixture onto each piece of dough.
- Fold phyllo into triangles around the mixture.
- Brush with butter.
- Place filled phyllo dough triangles on a large baking sheet.
- Bake in the preheated oven 45 minutes to 1 hour, or until golden brown.
- In a blender or food processor add the ingredients for the sauce and pulse it.
- Serve it with the phyllo triangles.
