These Honey Walnut Shortbread Cookies are deliciously crisp and buttery in a classic way, and are especially wonderful for Christmas and holiday baking! I consider them a luxury of cookies, and added bonus with the honey. The dough is easy to make using five simple ingredients.
Dare I say that these are my favorite cookies ever?
Honey Walnut Shortbread Cookies
These shortbread cookies are simply the best around. Your house will smell incredible, I couldn’t wait till they came out of the oven, just desperately needed to put one in my mouth as soon as possible.
These cookies are reminiscent of the Danish butter cookies that come in those blue tins around Christmas time. They taste slightly similar but are not as crispy. With honey in it, its softer on the inside and crispier on the outside.
What’s most funny about them is there are always several different types, but it’s all the same dough, just baked in different shapes. It really shows how much the shape and texture of the cookie can change the experience.
These cookies are also very sturdy, which makes them great to be shipped or gifted to friends and family.
How to Make Honey Walnut Shortbread Cookies
This simple recipe for classic shortbread cookies calls for only 3 ingredients my friends, only 3 ingredients and you get to have the most delectable, buttery and sweet shortbread cookie you’ll ever have in your life. We’re talking butter, sugar and flour, that’s all!
And if you’re really brave, unlike me right now, dip them in some melted chocolate, that’s my husband’s way of eating them. Are you with me?
Or, simply drizzle some caramel sauce, or chocolate sauce, or a light dusting of powdered sugar. And dip, dip in your coffee, or tea, or even hot cocoa. I think I need to go downstairs, I have an appointment with my cookies.

Shortbread FAQs:
Can shortbread cookies be frozen? Yes, they freeze beautifully! Store in an airtight container or bag for up to two months.
Can shortbread cookies be made with brown sugar? Brown sugar is usually added for chewiness, which you don’t want here. These are supposed to be crisp and crumbly. So, I don’t recommend brown sugar.
Can shortbread cookies be made ahead? Definitely! And these honestly don’t taste best when they are freshly out of the oven. You want to let them cool completely, ideally for a few hours.
How to store shortbread cookies: Let cool completely, then store in an airtight tin at room temperature for up to two weeks.
If the cookies spread during baking, this means the butter warmed up too much while you were working with the dough. Next time, pop the tray with the piped cookies into the fridge or freezer until the cookies are firm to the touch and chilled, 15-30 minutes, then bake immediately.

- 1 cup butter
- 2½ cups all purpose flour
- ⅓ cup honey
- ¾ cups finely chopped peacans or walnuts
- 1 tsp vanilla extract or extract
- Beat butter, honey and vanilla in large bowl with electric mixer until mixture is light and fluffy.
- Add flour, 1 cup at a time, beating well after each addition. If dough becomes too stiff to stir, knead in remaining flour by hand.
- Work in nuts.
- Pat dough into shortbread mold or ungreased 9-inch cast iron skillet.
- Place a bubble wrap on top of the cookie and run a rolling pin across it to get that honey comb effect.
- Score surface with knife so it can be divided into 24 wedges, prick deeply with fork into score marks.
- Bake in preheated 350 F oven for 25-30 minutes.
- Cool in pan on wire rack 10 minutes.
- Remove from pan.
- Cut into wedges while warm.
