“THE BEET IS THE MOST INTENSE OF VEGETABLES. BEETS ARE DEADLY SERIOUS.”- TOM ROBBINS.
Beets have a inherently woodsy taste to them. I’ve had them in desserts as well as really spicy dishes, it can be very adaptive. I happen to love this vegetable. Didn’t know I love it this much. Here are my top 10 BEST recipes with Beets.
BEET BIRYANI
This easy and delicious beetroot vegetable biryani is my go-to on days when I feel like having a healthy biryani. A one-pot meal of rice, vegetables, and aromatic spices, it’s rich in flavor and elaborate enough to take center stage at parties or just for the family. Each bite is suffused with spice, veggies, or caramelized onions—deep and layered in flavor.

BEET LIFAFA(ENVELOPE) PARATHA
You all must have a recipe for a food that never fails you every time you make it. Paratha is one of them for me. Whoever cooked the first paratha is a genius. This is a dish that I’ve been making a lot after the kids got into school. Prepare the dough, stuffing the night before, and roll them in the morning. All you need to do after that is wrap well, and off it goes into their lunch boxes. How much easier can it be?!
ENDIVE BOATS WITH BEET-CARROT-FENNEL-PEAR IN ASIAN DRESSING
This has become one of my favorite go-to salads for parties, and everyone seems to love them. Entertaining should be fun, easy, and stress free and while you focus on the bird and pies, this salad is a cinch to make. Hope you get to try it out this holiday season.
BEETROOT PEAS KURMA
This healthy, vegan vegetarian curry will make you want to have vegetarian meals more often. Beetroot peas kurma is a weeknight curry at home, it is easy to make and packed with flavor.
BEET RAITA
The quintessential side for any Indian meal is Raita. There are many ways to make raita and beet raita is not the common on. Although I love it for it’s color and flavor. It’s robust and beautiful. All of this can be eaten as a light salad or meal. Serve it with some rice, or roti, and it is perfect.
BEET SOUP
A simple soup can warm you up when you are just not feeling too good. My earliest memories of this vegetable was good, in fact great..so I’ve built on it’s repertoire. This is also similar to rasam (Indian style thin tamarind and lentil soup), but has a very distinct flavor which comes from this root vegetable. I just drank it up as soup, but you could accompany this with rice or plain old bread on the side.
BEET MASCARPONE COOKIES
Take a bite, and you feel like you’ve eaten cake, ice cream, and cookie all at once. I can without a doubt say it’s one of the best cookies I’ve made in a while. They are soft, pillowy on the inside, and slightly crunchy on the outside with sugary bits in every bite..OMG, it’s divine. The beet juice adds a subtle yet beautiful and natural color. You can subconsciously taste it, but not that obviously.
ENJOY!
