This homemade pumpkin halwa icecream is so easy to whip up. It’s packed full of ingredients you most likely have on hand already, and isn’t too ingredient-heavy. Mix it with store bought ice cream, or make your own ice cream. Topped with crunchy brittle, it’s a surely winning dessert.

Before this week is over, many of us would have had a couple get-togethers with family or friends.
I have to admit: Thanksgiving is my favorite celebration among the many American traditions. I find the meaning behind it intriguing, and I enjoy the holiday. It’s about family, and being grateful and thankful for everything. And this Thanksgiving, I am more than thankful to be among my favorite people, my FAMILY. Words can’t explain how grateful and thankful I am for everything that’s happened to me.
With all of your support, food and blogging have become such an integral part of my life. Being able to reach tens of thousands of people every day is something that I still can’t wrap my head around. I am always so thankful for every single one of you viewing my posts, reading my book, and making my recipes in your households. It brings me so much happiness, because that is why I started my blog: to spread the joy of cooking and my love for it. Thank you all for being companions on my journey. Now, spending Thanksgiving in India with my family, I feel the need to spread the spirit of being thankful, as it is so important.
Something funny about all of my Thanksgiving meals is that they have never included turkey. I’m personally not the biggest turkey fan, so I try to make a grand meal around really, anything but turkey. My teen is the same way. We often try to skirt around the general Thanksgiving repertoire, making chicken or other game with copious amounts of sides, or using traditional Thanksgiving ingredients in more unique ways. This recipe is one of those, using pumpkin with an Indian twist in a delicious dessert. Pumpkin halwa has always been a favorite for the whole family, and combining it with ice cream with a brittle on top makes for an absolutely scrumptious dessert that the whole table will enjoy.

Pumpkin Halwa Ice Cream
This is probably the fastest and tastiest dessert ever. Use ready made ice cream and make this in no time. Pumpkin halwa is a delicious Indian treat that goes very well with the vanilla ice cream. The sesame brittle for this is quick and works well for a sweet nutty crunch. This will be a sure shot winner of a dessert for your thanksgiving. Serve it with pumpkin pie ice cream, and it’s even better.
- 2 cups pumpkin chopped and pureed or use ready made puree
- 1 cup full fat milk
- ¼ cup brown sugar
- ½ tsp cardamom powder
- pinch saffron
- 3-4 tbsp condensed milk
- Sesame seeds ½ cup
- Almond crushed - ½ cup
- 1 cup sugar
- cardamom powder - pinch
- Method:
- In a thick bottomed pan on medium low simmer, add pumpkin puree, milk and let it cook for 5 minutes stirring continuosly. Reduce the heat and cook for 15 minutes.
- It should be thick, add both the sugar and brown sugar, condensed milik and mix and let it cook for another 10 minutes on low simmer.
- Turn off the heat and add the cardamom powder and saffron.
- Let cool in the refrigerator.
- Melt the icecream by putting it in the refrigerator. Put it in the refrigerator for 3 hours.
- After the icecream is set 50 percent, mix in the halwa, and freeze it overnight.
- Take a heavy bottomed pan or non stick pan, add the sugar and let it cook for 5 minutes or until a single thread consistency. Then add the sesame and crushed almonds. Mix it for another 5 minutes. Add cardamom and pour it on a baking tray which is buttered. Press it down well or roll it out. Cut it and let cool for few hours.
- Serve the ice cream with some crushed brittle
