INSTANT JALEBI – Top 5 Quick Diwali Sweets
Jalebis are made after fermenting overnight or even for 24 hours. It might not be tedious, but it is quite time consuming. Back in India, it’s fried in a huge kadahi(frying pan). The batter is piped out of a white cloth with a hole. Each Jalebi is connected to each other as it gets piped, at least 30 of them( I know, it’s true). Straight out of the sugar syrup into our salivating mouths it went. It was a crunchy, sugary, fried piece of absolute heaven.
Now, who has the time? We all do. But then again, who has the patience ;)? You crave them and you can make them. The only trick to these are to eat them fresh with your loved ones.

Alcohol and desserts are pretty great on their own. When combined, the results are often epic”. –
Malpua is a sweetened pancake, generally fried in clarified butter, dunked in flavored sugar syrup, and eaten with thickened milk. This version is on the lighter side. I’ve used very minimal amounts of clarified butter (ghee) and drizzled with some sugar syrup. It doesn’t lack in it’s flavor and quite simple to make. Stuffing it with Pistachio Ricotta Cream makes it an easy meal to just pick up and eat.

Badam puri is made like a short crust with ghee in it. This mix has almond powder, saffron, sugar, cardamom in the mix. Very slowly, ghee is drizzled in to form a dough. The dough should be stiff and not soft. Add a tbsp of water at a time to pull the dough together.
Make sure to flour the surface a little so it doesn’t stick to the surface. Fold it into thirds to form a triangle, prick it and secure it with a clove, just like the traditional way. Deep fry in vegetable oil on medium heat until it golden brown. Take it out and sprinkle some granulated sugar for that extra sugary crunch (hey, it’s the festivities.
