I’m a self proclaimed queen of easy desserts. In fact, my friends often remember my desserts among an array of savory dishes. We love the unique and the experiments, but familiarity whispers coziness and warmth. Something we crave and we love.
So, it was logical that I made desserts for all the year-end parties the boys were having. Last month has been filled with celebrations and wonderful gatherings. My little boy’s turned thirteen and had a couple of parties. The older one graduates from high school, and my good friend turned 40 last month. On top of all the gaiety of friends visiting and parties, I’ve been working with Ghirardelli to create two dishes (I will be sharing it soon on this space) for their big summer cookout in San Francisco. Humbled and honored. It’s been quite a month, to say the least.
And while I had planned on posting this recipe this week anyway, it seems more pertinent now following so many celebratory moments. But then again, that’s what this recipe is all about. It’s jovial.
This recipe with cherries came about since the hubby is obsessed with cherries. There will be bags of cherries sitting in the refrigerator, although none of us except him love it. The little calls him the “cherry monster”. There’s only that much he can eat, and I had to create something with cherries, and what better than BLACK FOREST COBBLER. It uses a ton of cherries, makes the dessert gooey, and chocolate and cherries are a match made in heaven.
A cobbler is nothing but dough baked with some variety of fruits. A fresh, hot fruit dessert is one of my favorite things! The way the cherries get thick and sweet and syrupy when you bake this black forest cobbler is crazy good. It is a quick, easy dessert, perfect for showcasing those summer fruits! It comes together with just 10 minutes prep and is amazing with a scoop of vanilla ice cream or whipped cream to top it all off!
You can easily use other summer fruits — strawberries, raspberries, peaches, or apples would all work perfectly and be just as delicious.
Baking the BLACK FOREST COBBLER
Preheat the oven before starting to mix up the batter. Since the batter just uses baking powder as leavening, you need to mix, and not over mix it and bake immediately. If you see some flour not mixed in, it is totally OK. The mixture first will be dry, like biscuit dough, that’s how it should be. When you add the water, everything gets mixed in. Do not worry about adding the hot water, that is what makes the cobbler the perfect puffed beauty and gooey.
I used the Baileys Chocolate Cherry Liqueur and it added the extra umph to the dessert. You could even add Kirsch or omit it and make it alcohol free. I love adding it, it’s a hidden flavor that really works.
- 1 cup flour
- ½ teaspoon salt
- 1½ teaspoons baking powder
- ½ cup sugar
- 1 tbsp espresso powder
- 2 tablespoons plus ¼ cup cocoa powder
- ½ cup milk
- 3 tablespoons melted butter
- 1 cup pitted chopped cherries, more if you prefer. You can use canned too if you can't find fresh
- 3 tbsp chocolate cherry liqueur or kirsch
- ½ cup packed brown sugar
- 1¼ cups hot water
- Preheat your oven to 350 F.
- In a bowl, combine the flour, espresso powder, salt, baking powder sugar, butter and 2 tablespoons cocoa. Stir in the milk.
- Take a 9 inch pie dish, a cast iron or mini dishes. Put the pitted cherries in the bottom of the dish in one layer. Then spoon the thick mixture over the cherries. Make it even as possible. Pour the liqueur over it evenly.
- Combine the brown sugar and remaining cocoa and sprinkle over batter. Pour hot water over top (do not stir). Bake for 40 to 45 minutes.
- Let sit for about 20 minutes so it can set.
