Happy November!!! Happy Fall!
Fall is absolutely my favorite season, for its beautiful rich dense colors and the chill in the air. While summer has its own glory, this time of the year brings out the warmth, coziness, and hospitality in all of us. The plethora of colors we see when we go for a walk is unmatched, although living in the Bay, the fall colors are not easily seen.
Weekend comes and I always almost have waffles, muffins or pancakes. The thought that comes when I make these is that, they would come handy on the weekdays too. Guess what, I make 10 or 30, they are gone by Sunday evening.
This recipe definitely came by with a sneaky thought to add fruit in a pancakes to amp up the healthy game. Boy, did I know that these would be requested a lot. Apples are probably some of my favorite fruits to bake with, also because they were commonly available in India, and so sweet and delicious. My teen can make this in a jiffy. They’re probably the easiest and most delicious fluffiest pancakes.
Almost like having a cake for breakfast, now that’s a delicious way to start off the day, right?!!
Have the best week ever!
Ash
- 2 gala apples grated
- 2 large eggs
- 1 stick unsalted melted butter
- ½ cup milk
- 1 tbsp vanilla extract
- 2 cups all purpose flour or 1½ cup all purpose and ½ cup almond flour/meal
- ½ cup white cane sugar
- ⅓ tsp salt
- 1 tbsp baking powder
- 1 tsp dried ginger powder
- butter for the pan
- In a large mixing bowl, add the grated apples, eggs, melted butter, milk and vanilla extract and mix everything until it is well combined.
- Add the white sugar, salt, baking powder,ginger powder and mix well. Last add the all purpose flour and mix without overbeating it. Let it rest for 15 minutes.
- Preheat a griddle to medium heat and butter the pan before pouring a large ladle full of batter. Coo2 it for 2 minutes and flip and cook for another 3 minutes. You can add some apple slices on top to decorate.
- Serve with candied walnuts, butter and/or maple syrup.
- Heat a medium non-stick skillet over medium heat, add 1 cup walnuts, ¼ cup granulated sugar and 1 Tbsp butter.
- Heat over medium heat for 5 minutes, stirring frequently so your mixture doesn't burn (especially towards the end). Turn off the heat and drizzle a tsp of lemon juice to stop chrystalization.
- Serve on top of the pancake.

Your post reminded us exactly how we feel about fall. Isn’t it an amazing season?
The pancakes look fantastic. Pancakes are a new thing here in Greece, and we have to ask you (since you mentioned making some ahead in the weekend): is there a way we can make let’s say 10 and use them for breakfast throughout the week? Can they be stored and reheated?
