A common summer day, to me, means pj’s, workout pants, and staying in all day procrastinating. Days start late and run late. The workout pants are very convenient for regular hikes and runs. There is no routine and no professionalism, just hanging out and thinking about what to do next. Sometimes we decide an impromptu drive, a swim, or a movie marathon. We are regulars to the half price book store. By the end of summer, we have a huge sale ourselves. I love summer and hanging out with the boys very much. Of course, every once in a while, I get bored of this regimen and decide to have friends over. Summer entertaining is the best. I get out the frills, the flowers, and a pretty hair do, which is always fun.
Last summer I threw a simple chaat party with a lassi bar. Each chose their fruits, and we whipped up their lassi. Lassi is quite a common yogurt drink for Indian summers. Mostly made plain or mango which is quite popular. The twist to the regular was a hit. You can use any seasonal fruits of your choice and follow the proportions. It requires very less prep, so its a casual way to entertain. I love the laid back aspect of sitting around the kitchen, letting your friends decide and be a part of prepping dinner.
Hope all of you are doing well and having a good time. Enjoy summer and if it’s winter in your neck of the woods, have fun.
- 1 cup fresh shelled lychee or a cup of canned lychee without the water.
- 1 cup 2% milk fat yogurt thick
- ½ cup coconut water(optional) or water chilled
- ¼ tsp freshly grated ginger
- 3-4 tbsp sugar or accordingly
- ⅓ tsp salt
- 6 ice cubes
- 1 cup fresh pineapple diced
- 1 cup thick yogurt
- 1 cup ice cold chilled water
- 2-3 tbsp of cane sugar
- pinch of salt
- Blend everything along with the ice cubes in a blender and whip till smooth. If you still see a bit of chunks, you can pass it through a sieve for a smooth lassi. Pour in tall glasses and serve immediately.
- Blend everything for the pineapple lassi until smooth and blended well. Pour in glasses with some ice cubes and serve immediately.
Possibly my favourite drink in the whole wide world. And you’ve infused wonderful flavours into it. Lassi bar! Sounds incredible…i may steal your idea in the forthcoming summer. Love the photos!
Summer has really officially begun for us here today since yesterday was the last day of school! I feel relaxed just listening to your summer “itinerary”. I love your laid-back vibe, mixed in with a few surprises here and there. The idea of a lassi bar is so cool, and I feel like I’m on a vacation just looking at the pics of the lassi. Thank you for that. Let’s make a toast to a chill summer!
Absolutely loved the Lassi bar idea and the variation from the regular Mango Lassi!!! The first shot looks beautiful!
Both of these sound and look so refreshing. I’d love to have a glass right now! I too love those days when I can just lay around and do nothing. Typically though by the end of the day I find myself saying, “I can’t believe I didn’t get anything done today.” Then somehow it seems like I regretting just lying around – yet, I love iti!
I am doing this next summer !!! 😀
Love the lassi, perfect summer drink!
Thanks dear. The lassi bar is always a hit.
Such a delicious, refreshing way to beat the heat! They both sound amazing!
Thanks so much Liz. It is so very refreshing and cooling.
Such a great twist on and old classic! I’ve never had a lychee lassi and I love pineapple. Thanks for the inspiration 🙂

Thanks hun.
Wow such a refreshing take on Lassi. Lassi is my favorite lazy weekend afternoon drink. I think by adding the ginger it will have a little more kick and taste even more cooling.
It is quite cooling with the ginger, you are right.
Lychee ginger sounds wonderful! Love lychees. I would love to say my summers are laid back but that hasn’t been the case lately, it’s all good though! Love the chaat party idea. I love chaat 🙂
This summer I made it a point to stay calm and relaxed. It was one heck of a tough one last year. Thank God for all the calm and peace this year. May you have a wonderful summer and Ramazan. xoxo
This lassi looks SO FANTASTIC!!!! How could you come up with this wonderful combination, Lychee-Ginger Lassi and Pineapple Lassi? Love it, Ash 🙂
Pang you are a darling, thanks so very much.
What an exotic combo of flavour! I would love one huge glass NOW!
Thanks my dear. I would’ve loved to enjoy a glass or two with you too.
OMG a lassi bar. You’ve changed my life Ash in the best possible way!! 😀
Hahah…Thanks my dear. I have so many bookmarked from your blog. Need to get to it asap.
Why wasn’t I invited to the simple chaat party with a lassi bar?
Probably because I would have drank all the lassi leaving none for the other guests 😉
You need to come over next time you are in SF. I promise I’ll cook anything you want and you have to make all those delicious healthy one for us. Deal..
A “lassi bar” sounds like such a brilliant idea for a summer party! And, Asha – I am so loving your combo of lychee with ginger and pineapple in this lassi! I don’t think I’ve ever had anything quite like this before! Brilliant!
Thanks so very much hun. My friends loved the idea of the bar..they do it all the time.
I love lassi but this is the fist time I have seen a pineapple version. I have tried mango before but pineapple sounds awesome. Great pictures my friend!
Coming from you, I’m so thankful. Thanks so very much dear.
