It’s not too often that I make naan at home. In reality, it’s not too often that we eat Indian food other than at home. We cook so much Indian food at home that we hardly have the urge to eat Indian food outside. Does that happen to you?
If you had asked me to make naan at home 20 years ago, I would say, “Let’s go and buy some in the local restaurant.” It was tasty, good quality, and soft even the next day! Staying in US, the food is not at all authentic. Very rarely can we find good quality traditional Indian food, or maybe it’s just me. I am picky.
Making naan at home is as easy as making a pizza dough. In fact, it’s much much easier. I tend to make a yeast-free one most of the time because it’s less time consuming and tastes as good. The best thing about making them at home is that it stays soft for a longer time and comes together faster than a take out does. Of course, it’s also healthier. I like to make naan pizzas with leftover vegetables, Indian pizza.
- 2 cups Whole Wheat Flour
- 2 cups All Purpose Flour
- ¼ cup sour yogurt(unflavored and unsweetned)
- 1 tbsp baking powder
- 1 tsp salt
- ⅓ tsp baking soda
- ½ tsp nigella seeds
- 4 garlic very finely chopped
- 11/2 cup lukewarm water(a little bit more if required)
- 1 tbsp butter
- Mix yogurt, baking powder and ⅓ cup of water,set aside for a minute or two.
- In a large mixing bowl, add the flours, baking soda, salt. Add the yogurt mixture and all of the water. Make a semi soft dough. If you need more water, add a little at a time. It should not be very sticky or very hard at all. Cover with a damp towel and let rest for at least 10 minutes.
- Knead it for couple of minutes. Rest for another 2 minutes.
- Keep a non stick or a cast iron pan(which I prefer) and get it really hot.
- Take a tennis ball size of dough and roll using some loose flour. Roll approximately 10 inches or until it out not too thin or thick. Sprinkle some nigella seeds and some garlic, roll again so it gets stuck to the dough and doesn't fall of while cooking.
- Put the nan on the hot griddle and let it cook for 30-40 seconds. You will see few bubble on top, then turn the naan and cook the other side. It will take about 2-3 minutes to cook. Smear some butter on both sides and serve hot or wrap in a cloth and keep warm until ready to serve.
I made a dry Pav Bhaji Masala made from cauliflower, potato, peas, carrots. Sauteed some onion, tomato, grated ginger and added pav bhaji masala. Cooked for a bit and added the mashed cooked vegetables. Keep the sabzi /vegetable dry. Top the cooked naan with vegetable mix, add some fresh mozzarella. Bake at 400-420 degrees for 5 minutes or until the tops are melted and gooey. Top with some fresh green onions.

Wow! 2 delicious birds killed with one stone:-)I make Naan almost every time I make pizza. After I roll out a large sized pizza, I make naan with the remaining dough. I’ve made this recipe too but we call it kulcha. Naan/Kulcha whatever the name may be …they are from the same Indian flatbread family and they are always delicious. I am amazed by the rich diversity that exists in our culture. Love your idea of topping them with pav-bhaji masala. I can imagine the wonderful flavours on a soft crusty bread. Brilliant!

Your nan look so tempting. There was a time when we made nan every day in the tandoori oven. Nowadays I feel a bit strange making it because I need a tandoori oven to stick it into the clay sides of the oven.

Boy oh boy, does that look good! Another way to use yogurt…though I don’t think I would manage to produce such delectable looking naan and pizza. : ) Homemade is always so much better but you have that extra special touch. I tried this recipe once for naan with yeast but the naan just wasn’t that good – I have to try your version with yogurt, Asha – your naan looks so incredibly wonderful! If I made homemade naan like this, I would never buy from the store either!

Same here, we never go out for desi food, it’s never good! And even when you find a place you somewhat like, they will be good for a few months and then the quality just deteriorates. It’s so frustrating.
I do make naan at home, not often because otherwise I will eat them all, but occasionally. When I do I go all the way with the yeast etc.

Our Costco carries half decent mini naans which are really good when you toast them. Makes life a bit easier, especially at parties 🙂

Asha! I made this tonight! I went to two stores in town and they were both out of Naan. Then it hit me! Asha has a recipe, I just know it! So I came home and found this. I whipped it up in no time. Devoured one with a Greek yogurt dip then made flatbread pizza with leftover pesto! Wallah.. dinner is served! Hooray! I used whole wheat bread flour instead of plain whole wheat because that’s what I had on hand. I cooked them a bit longer to get a nice char on them. They are delicious. I’ll never buy pre-made again! Thank you for this my dear.
