Every year, I’m asked what I would like to eat on Mother’s day before they decide on eggs and toast. Kids plan with their dad, and they always make a tasty breakfast of Indian eggs with toast. It stops there :). I thoroughly enjoy my morning with some strong Indian filter coffee and the masala eggs. Then I get this: “Mom I don’t know how you’re able to cook so much all the time… It’s so tough.” As cooking is second nature for me at this point, I would be more than happy to enjoy in my kitchen the whole day. Even though I tell them I could, all I get is a big “No.” Afterwards, they tell about reservations for lunch and dinner. Mother’s Day is always fun, a bit of pampering.
Hypothetically speaking, if some one were to cook a nice meal, I’d love these mini pot pies. With this, a beautiful red wine, and a movie on Netflix, I’m all happy. It’s a flower bouquet in puff pastry form. What more could a food lover want? 🙂
This is a chicken curry unlike many curries of India. There’s no chili powder, nothing to change the color. It’s a very mild dish, with little to no ground up spices. It’s quite luxurious . The method too is very different from the norm. Onion is boiled to bring out the sweetness along with ginger and garlic. The pungent smells of garlic vanish when boiled. The base for the curry is cashew and it’s finished off with some coconut milk. But, do not be deceived. There is some heat from the slit green chilies that go into it. The bouquet garni is taken out along with the green chillies at the end. You could either bake the top separately or top it exactly when it’s ready to get into the oven. If you don’t, the pastry would be soggy. It is a celebration anytime with this dish.

Just a few minutes after I said “wrap,” everything was polished off with big smiles. Happy Mom-Happy Kids. To all moms out there: ‘Cheers’. You guys are the best.
- 2 pounds boneless chicken or 3 chicken breasts
- 2 large potato or 10 baby potatoes
- 2 carrots
- 2 onion quartered
- 10 cloves of garlic
- 1 inch ginger
- 15 or one small handful cashew pieces
- 3 cups water
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 inch cinammon
- 4 cloves
- 4 cardamom
- 1 star anise(optional)
- 2 bay leaves
- ½ cup semi thick coconut milk
- 4 green chili slit a bit
- 1 tsp white pepper or black pepper
- Salt
- 2 tbsp vegetable oil
- 1 Sheet Puff pastry
- 1 egg beaten for the wash or heavy cream
- 1 tbsp black sesame seeds to top it
- Wash and prep the chicken. Cut it to bite sized pieces or about 1 inch.
- Peel the potatoes and dice it the same size as the chicken. If you plan on using baby potatoes, you don't need to peel. Just half it.
- Dice the carrot the same size as the chicken.
- In a sauce pan, add 2 cups water and the quartered onion, ginger, garlic, cashew pieces. Bring it to a boil, simmer and cook for about 15 minutes. Turn off the heat and let cool completely.
- Grind the onion mixture in a blender to a smooth paste.
- Make a bouquet garni(tie all the spices in a cheese cloth) with all the spices. Crush it ever so lightly with a knife, or a garlic pounder.
- In a thick bottomed, 2 tbsp of oil and let it get hot. Add the bouquet of spices and toss it in the hot oil. Then add the onion,ginger-garlic mixture to it and simmer. Do not let the mixture get brown at all. Add the slit green chilies. Add salt. Add the chicken pieces, potato and carrots. Add 1 cup of water. Cover and cook for about 20 minutes or until the veggies and chicken have cooked. Open the lid, add ½ cup of coconut milk, pepper and simmer for another 5 minutes. The consistency is something what you want, if you like it thicker boil is uncovered for longer. If you want it thinner, add little bit more of light coconut milk. Turn off the heat and let it cool.
- Puff pastry. Roll slightly and cut into any shape you want. Put it on a plate and freeze. Use oven proof dish and spoon some chicken curry in it. Top it with the puff pastry, sprinkle some sesame seeds and brush with egg wash. Bake at 400 degrees for 10-15 minutes. Alternatively you can bake the puff pastry separately on a baking tray and top it.

I rarely leave replies, but this was so good, I had to! It was bomb! Healthy too: low carb, lean protein, good fats, fiber rich & packed with flavor. I made double to have some in the freezer for my husband. I tried to leave 5 stars but the computer would only select 1.
I made a vegan version using homemade seitan for my boyfriend & chicken for me. Here’s my experience:
The recipe says boil the onions in 2 cups water, but it made the chicken version too watery. If I did it again I would use 1 cup to water so I could add more coconut milk to get thicker “cream” consistency. After blending I separated the mixture into 1 pot for vegan seitan, 1 pot for chicken. The Vegan seitan gets dry really fast, so add water in 1/2 cups (or coconut milk) until it’s how you like.
We used small purple potatoes for color, cut into quarters. We also substituted peas for 1 carrot. Also I didn’t have all the spice seeds, so instead of cooking them in coconut oil in the beginning, I just added very little powdered cumin, turmeric, & all spice (added in small dashes to taste) towards the end. Not that it needed spices, the garlic, ginger, coconut + heat from the chilis was delicious on it’s own!
I lived in SF for 7 years and recently moved to Kauai (not many spices available in stores so I have to make due with what I have!). I have a sense of nostalgia & camaraderie when I go through your blog.
