It’s 3.30 p.m.; the front door opens to two hungry boys. The perfume of pepper, warmth from the spices, and the sizzling sounds are just inviting. If I was in my parent’s home, I would ask the same thing, “Mom, it smells so good, what are we eating?”
I have to put my foot down on some things.”Go change, wash up, put on your home clothes, and I will tell you what I cooked,” I say.ย
Little one- “Mom, but it smells so good, pleasssseeee, can I just wash my hands and eat?”
Me- “No, wash up quickly..”
The little one ย runs up. In five minutes, he gets down and smells the chicken. He screams, “Mom, it’s chicken, chicken, I love chicken, you are the bestest!”
He sits down to eat, takes a few bites and runs to get some water. ย He screams to his brother, “Come down, this is the spiciest.. and you are missing it,” and runs back for some more water.
The teen gets down and completely enjoys the meal.
Little One to his Brother – “Isn’t it good?, it’s spicy, but so good. Mom, can I get some more, pleassse?”
10 minutes after the teen is down, he finishes his meal/snack and gets to the kitchen to help out.
The little guy is still sitting, talking and yakking.ย
Little one- “Dude, how can you finish it so fast, maybe you didn’t relax and enjoy. See, I am enjoying,” gulping down rest of the water.ย
Both my teen and I look at the jabberer and give him a smirk.
Whether it is for your little ones or for a party, this will be a hit with all. Some may huff, and some may tear up. However, they will gulp a bit of water, ADULTS some wine, and enjoy it.
It’s also one of those dishes which is amazing for parties. It’s simple to make and full of flavor. ย It’s a perfect starter or a great dinner with some rotis or wrapped in tortillas. What’s even better is that it looks like a lot of work, but is so easy!
Do you sometimes doubt yourself about a recipe, it’s just got so few ingredients; how can it taste amazing?ย
Well, some recipes are just like that, right?..This one is one of them. Hope you get to try it sometime. Remember to fill a jug full of water for your kids!
Ingredients:
For marination
2 pounds chicken cut to 1 inch thin slices
1/2 cup thick yogurtย
1 tsp finely minced garlic
1 tsp finely minced ginger
1 tbsp coarsely crushed pepper
1 tbsp salt
1/4 tsp turmeric
To stir fry
2 – 3 tbsp vegetable oil
1 tsp cumin seeds
Green, Red,Orange bell pepper thinly sliced
1 tsp garam masala
2 tsp freshly ground black pepper(or accordingly)
salt
scallions to garnish
Fried Rice PAPAD to serve it on.ย
Method:
1. Marinate the chicken in yogurt, garlic, ginger, pepper, salt and turmeric for 1/2 hour or upto 2 hours.
2. In a thick bottomed flat pan add the oil and let it get hot. Let the flame be on high, and ย add the cumin seeds and let it get some color, then add the marinated chicken and leave it for 5 minutes. ย DO NOT ADD WATER. ย After the chicken browns a bit stir it and let cook, making sure it doesn’t burn. Once the chicken is almost cooked add the bell peppers, garam masala, salt required for the vegetables, 1 tsp fresh ground pepper and keep stirring and cook.ย
3. It will take 3-4 minutes to cook the bell pepper. ย IF you want the bell pepper to have some crunch cook it only for 2 minutes and remove from flame.
SERVE it on top of the Papad. ย Break the papad and use it as a vessel to enjoy the chicken.
ENJOY.
