Today I am happy to be guest writing for one of my first blogger friends. Now, we all know blogging is a lot of work which we all love, but doing it with two little ones can pose some challenges. Shruthi, a beautiful photographer manages both pretty well and her sincerity can be seen in her work.

Today, I have a very popular North Indian dish, Kadhi. A simple yogurt gravy which is made special by addition some fritters. It goes perfect with rotis/flatbread or rice. Very popular in the northern part of India. I have made it my version by roasting some garlic as a surprise addition.
KADHI With PAKODI
Ingredients:
For Pakodi:
2 cup packed chopped spinach
1 cup corn
1 cup garbanzo bean flour/besan
1 tsp red Chili powder
1 tsp salt
some water to mix this to a thick mixture
Mix all this very well, with water and the mixture has to be thick like a fritter consistency. Use small icecream scoop to make uniform fritter, fry it on medium high heat and keep aside.
For Kadhi:
1 whole garlic (roasted)
2 cups thick yogurt
1/2 cup garbanzo bean flour/besan
1 cup water
1/2 tsp red chili powder
1/2 tsp garam masala
1 tsp dried meethi leaves
1/2 tsp sugar
1 tsp salt
1/4 tsp turmeric
1 tsp black mustard seeds
1 tsp cumin seeds
some curry leaves
1 tsp vegetable oil
Method:
1. Wrap the whole garlic in aluminium foil and roast it in a 400 degree oven for 30 minutes. Alternatively you could roast the whole garlic over flame very very carefully. You could also leave it on the grill, but the close the top and grill for 15 minutes. Once done, remove the meat of the garlic by squeezing the top and you will have some sweet garlic paste.
2. Whip the yogurt well until it reaches a buttermilk consistency.
3. Add flour/besan and water to the yogurt and beat very well. Add salt and keep aside for an hour.
4. In a large heavy bottom pan, add oil, add mustard, cumin, curry leaves and let it cook for a bit.
5. Reduce the heat to medium low and add the garlic paste, red chili powder, turmeric, garam masala and fry for 30 seconds, making sure not to burn the spices.
6. Add the yogurt mixture to the pan and mix it well. Keep stirring the mixture at all times, the temperature of the heat to be medium or low.
7. Let it simmer and cook for 20-30 minutes.
8. Crush the dried meethi leaves and add it to kadhi. Switch of the flame and add the pakodi in it and let sit for an hour before serving and Serve hot with rotis or rice.

Wow I love all the ingredients in this Indian style soup. I have never heard of it. I am a really big fan of Indian food. I have many Indian spices including the besan flour to make this so I shall try it soon. Can’t wait to see what other recipes you post 🙂

Anything with yogurt I will certainly drool. I don’t know much about the name of the dish but it definitely very inviting. Heading on for the recipe now.

I love pakora kadhi with hot jeera rice.. your version is unique with the roasted garlic! Pure genuis in my mind..
